How do food trends impact (ie influence) restaurants?

EG- How does the smaller portions trend impact and therefore influence a restaurant.
There’s pretty much nothing on Google or Wikipedia so I’m screwed if you guys don’t know.
BTW; I had an interview with an Australian restaurant owner. . .he had no clue.

It will influence the menu offerings and possibly the revenues and margins of the restaurant. Fish has become more popular relative to other proteins over the last decade or so. To meet that demand, restaurants will offer more fish selections, which generally mean higher prices and lower margins than, say, chicken.
Currently people are demanding lower priced meals, which means restaurants will offer more items with low cost ingredients (think starches) and smaller portions.
You don’t need a lot of research here, just some common sense.
